Strawberry and Cream Pancakes

Here is a sweet and simple delicious recipe perfect for special occasions or, really...any occasion! 


  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • Whipped cream (optional)


  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).
  4. Heat a non-stick pan over medium heat. Scoop a 1/4 cup of the batter onto the pan and cook until small bubbles form on the surface, about 2-3 minutes.
  5. Flip the pancake and cook until golden brown, about 2 minutes.
  6. Repeat with the remaining batter.
  7. Serve the pancakes topped with fresh strawberries and a dollop of whipped cream, if desired.
