Strawberry Prosecco Popsicles

Sweet, tart and refreshing, these fruity/boozy popsicles are a perfect grown-up treat. 

INGREDIENTS

2 1/2 cups fresh chopped strawberries
1/2 cup Simple Syrup
1/2 cup Prosecco (or other sparkling wine)
Juice of one lime

METHOD

Puree strawberries a blender or food processor until smooth and juice-like.

Combine the strawberry puree, simple syrup, Prosecco and lime juice in a bowl and whisk. Once everything is blended, transfer to a pitcher or a large measuring cup—anything with a spout to make for easier pouring.  Allow the mixture to stand until the Prosecco bubbles subside. 

Pour mixture evenly into popsicle moulds. Freeze for 8 hours or overnight.
