Watermelon Mint & Feta Salad

This sweet, savoury and oh so refreshing summer salad is quite literally the best. 

INGREDIENTS

1 small watermelon, rind removed and cut into bite-size chunks
1 tablespoon of fresh-squeezed lemon juice, plus zest of one whole lemon
3 tablespoons of very good olive oil
1/3 cup of fresh mint leaves, chopped
4 ounces of feta cheese
Salt & fresh cracked black pepper

METHOD

Combine the watermelon chunks, lemon zest and juice in a large bowl. Add the oil and mint and toss until all the watermelon is dressed. Add fresh black pepper. 

Transfer the dressed watermelon to your serving dish and crumble the feta on top. Drizzle with a bit more olive oil and salt and more pepper to taste. Garnish with whole mint leaves. Serve immediately.
