Whole Wheat Banana Oat Muffins

September has a way of resetting everyone's routine at once: lunches, workdays, early alarms—all of it. These muffins are meant to make mornings a little easier. They lean on ripe bananas and oats instead of a heavy dose of sugar, so they hold up as a real breakfast rather than a disguised dessert, and they freeze beautifully, so you can bake once and be set for weeks. Pack one in a lunchbox, grab one on the way out the door, whatever the morning calls for.

INGREDIENTS

3 ripe bananas, mashed (about 1 1/2 cups / 350 g) 
2 large eggs
1/3 cup / 80 ml plain yogurt
1/4 cup / 60 ml honey or maple syrup
1/4 cup / 60 ml neutral oil
1 tsp vanilla extract
1 1/2 cups / 190 g whole wheat flour
1 cup / 90 g rolled oats
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Optional mix-ins: 1/2 cup / 75 g chopped walnuts, dark chocolate chips, or dried fruit

METHOD

Place the oven rack in the middle and preheat oven to 350F / 180C. Line a 12-cup muffin tin with paper liners or grease well.

In a large bowl, whisk together the mashed bananas, eggs, yogurt, honey, oil, and vanilla until smooth.

In a separate bowl, combine the whole wheat flour, oats, baking soda, cinnamon, and salt.

Add the dry ingredients to the wet ingredients and stir just until combined; a few streaks of flour are fine. Overmixing will make the muffins dense. Fold in any nuts, chocolate, or dried fruit you're using.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake for 18–20 minutes, until a toothpick inserted in the centre comes out clean and the tops spring back when lightly pressed.

Let the muffins cool in the tin for 5 minutes, then transfer to a rack to cool completely.

These keep well in an airtight container at room temperature for 2 days, or in the fridge for up to a week. For longer storage, freeze them individually wrapped and pull one out the night before, or reheat straight from frozen in a warm oven for a few minutes.
