Buttermilk Peanut Butter Bacon Pancakes for Dad

There's something that seems particularly fatherly about the combo of peanut butter and bacon―though, we pretty sure everyone will find these decadent pancakes irresistible. Perfect for a Father's Day brunch!  

INGREDIENTS

  • 2 cups flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1 egg, beaten
  • 1 tablespoon vanilla
  • 1/4 cup peanut butter
  • 1/4 cup butter melted
  • 8 pieces bacon, cooked, cooled & crumbled
  • butter or oil for frying pancakes 

METHOD 

Beat together eggs, butter, peanut butter, buttermilk, and vanilla.  Add flour, sugar, baking powder, baking soda, and salt. Mix well until mostly smooth―a few small lumps are okay, you don't want to over mix. Fold in the chopped bacon and allow the batter set for 5 minutes. Time to prep your pan! 

Heat a nonstick fry pan or griddle over medium-low heat. Add a teaspoon of oil or butter or spray with cooking spray.

Pour batter onto the griddle (not too much―just a few tablespoons) and cook until bubbles form and start to pop. Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone. Let cooked pancakes rest on a heat proof plate in a 200 degree F oven until ready to serve.

Top with more chopped bacon and serve with pure maple syrup.
