Healthy Back-to-Reality Lunch Recipe: Veggie Wrap

Kids are heading back to school. Adults are heading back to the office. And everyone needs packable nutritious lunch options. This veggie wrap recipe is a  lunchtime winner. Not only is it packed with nutrients and vibrant colors, but it's also easy to make. Customize how you like and maybe even get the kids involved.

INGREDIENTS

For the veggie wrap:

  • 1 large whole-grain tortilla
  • 2 tablespoons hummus (your choice of flavor)
  • 1 cup mixed greens (spinach, lettuce, or arugula)
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber slices
  • 1/4 cup red bell pepper strips
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup avocado slices
  • 2-3 slices of your favorite cheese (optional)
  • Salt and pepper to taste

For the avocado ranch dressing (optional):

  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1/4 cup milk (or dairy-free alternative)
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried dill
  • Salt and pepper to taste

 

METHOD

1. Prepare the Avocado Ranch Dressing (optional):

  • In a blender or food processor, combine the ripe avocado, Greek yogurt, milk, lemon juice, minced garlic, and dried dill.
  • Blend until smooth and creamy.
  • Season with salt and pepper to taste. Set aside.

2. Assemble the Veggie Wrap:

  • Lay the whole-grain tortilla on a clean, flat surface.
  • Spread a generous layer of hummus evenly across the entire tortilla.
  • Place the mixed greens in the center of the tortilla, leaving about an inch of space on each side.
  • Layer the shredded carrots, cucumber slices, red bell pepper strips, cherry tomatoes, and avocado slices on top of the greens.
  • If you'd like, add a few slices of your favorite cheese for extra flavor.

3. Season and Fold:

  • Sprinkle a pinch of salt and pepper over the veggies to enhance the flavors.
  • Carefully fold in the sides of the tortilla, then roll it up tightly from the bottom, creating a wrap.
