Tomato Bruschetta

 Fresh ingredients and a good crusty bread is all you need for this summertime classic. It comes together in minutes and never disappoints. Because this dish is so simple, the best ingredients do make a difference. Garden or farmer's market tomatoes, very good olive oil and a proper French baguette will do the trick! 

Ingredients:

  • 1 French baguette, sliced into ½-inch thick pieces
  • 4 ripe tomatoes, diced
  • 2 cloves of garlic, minced
  • ¼ cup fresh basil leaves, chopped
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped red onion, grated Parmesan cheese, black olives

Instructions:

  1. Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet and lightly brush each slice with olive oil. Bake in the preheated oven for about 8-10 minutes or until golden and crispy. Set aside.

  2. In a mixing bowl, combine the diced tomatoes, red onion, minced garlic, basil leaves, and parsley. Toss gently to mix the ingredients.

  3. Drizzle the balsamic vinegar and olive oil over the tomato mixture. Season with salt and pepper to taste. Stir well to ensure all the flavors are evenly distributed.

  4. Let the tomato mixture marinate for about 10-15 minutes at room temperature, allowing the flavors to meld together.

  5. Take each baguette slice and generously spoon the tomato mixture on top. Ensure that each slice is covered with a layer of the tomato mixture.

  6. You can sprinkle some grated Parmesan cheese, red onion or black olive slices on top 

  7. Arrange the bruschetta slices on a platter or serving tray, and they're ready to be enjoyed!
